PEAR AND MINT SPINACH SALAD
This is one of my favorite summer salad recipes that I took from my Dad (aka Poppi) and tweaked a little bit with some fresh herbs. Serve it as a starter for a summer BBQ and I guarantee everyone will be wanting seconds. I hope you enjoy it as much as I do!
Ingredients
- 1 bag spinach
- 1 bunch of fresh mint
- 1 handful of blue cheese crumbles (easily substitute with goat cheese or parmesan)
- 1 handful of pecans
- 1 soft pear
- red wine vinegar
- olive oil
- 1 handful of dried cranberries
- salt and pepper to taste
Remove mint leaves from stem and chop. Combine with chopped spinach.
Roughly chop pecans and put into bowl.
Make sure to only use a very ripe pear. Peel and slice into dice sized chunks.
Mix together red wine vinegar and olive oil for the dressing.
Add blue cheese crumbles and dried cranberries for a sweetness to counteract the bitter. Toss in dressing and serve cold. Bon appetite!
